We can play just about any hymn. Most hymns are arranged for soprano, alto, tenor, and bass voices, which correspond to the respective ranges of the four instruments in a string quartet. Therefore, we can generally play any hymn for which we can get the music — and we own a collection of 538 hymns entitled Great Hymns of the Faith, which includes most of the commonly-heard hymns.
